“This is the blue that we set out to make in 2002, to represent the new generation,” says David Gremmels, who, with partner Cary Bryant bought the Rogue Creamery from the Vella family.
Gremmels and Bryant ended up building a separate aging facility for Caveman to keep it segregated from the creamery’s other blues. All of them get their veining from Penicillium roqueforti, but from different strains. Caveman needed its own space, with its own temperature and humidity settings, to develop the natural rind that distinguishes it from some of the other Rogue blues.
This cheese is buttery and blonde, with some salt crystal textures. It is a great blue cheese introduction, without the sometimes too salty or over-the-top funk of many blues.
Tasting notes: Sweet and fruity with some hay and vanilla tones.
