The Roth family began a successful cheesemaking business outside Zurich, Switzerland, in 1893.  In 1991, three descendants of the family started a new cheese operation in Monroe, Wisconsin named the Roth Kase dairy. The Roth Kase dairy makes several cheeses, but Gruyère is its signature and the Surchoix Gruyère is the flagship.

The cheese makers at Roth Kase have continued in the strict Swiss tradition right down to the 15,000 pound copper vat used to cook the curds.  The young 16 to 18 pound wheels are rubbed frequently with yeast and brine and then selected bacteria is added to the wash. The bacteria is used to break down the surface proteins, establishing themselves on the rind and aiding in its development of the aromas and flavors until eventually it is washed with the brine only.  After 9 months of aging,  the finest wheels of Gruyère are selected for additional curing and to be made into Surchoix.  Surchoix is from the French word meaning “top choice”
