“Charolais” cheeses are made from unpasteurized full cream goat’s milk. They are upright, cylindrical in shape and slightly convex. The cheese has a firm paste, chalky in the center ripening toward the outside. The rind varies from beige to ivory when young to become bluish with mould. Streaks mainly of blue penicillium may appear during maturing.
Tasting notes – Rich creamy paste with lemon acidity that mellows with age giving way to a nuttier richness.
