Stracco di Capra is not unlike a Taleggio in appearance. Young cheeses have a thin delicate wrinkled pinky-orange rind with pink blooms and patches of blue-grey mould whereas matured cheeses will have warm rustic looking rind where the pink blooms have all but disappeared, the wrinkled look becomes more pronounced and blue grey mould dominates. The pate is uniform and compact and has a lovely creamy dense texture that melts in your mouth.

Tasting notes:  The flavour is salty-sweet, earthy and goaty with
a slight tartness, the cheese is also very aromatic and truly gets better with age.
