Treccione comes from the word treccia which means plait or braid, and affumicatio means smoked.   So this is a smoked braid of pasta filata (spun cow’s milk).

The cheese is aged for a couple of days and has a chewy, stringy, texture.  After the aging the cheese is lightly smoked.  At this point it takes on the wood smoke aromas and the tan color associated with smoked cheeses.  Under the rind the layering structure of the paste is visible, the fragrance is delicate and the taste is sweet or slightly savory.
